FRYERS WOK TYPE FOR SAUTING, TILTABLE AND WITH AGITATOR 

CHARACTERISTICS

Construction  

  • Manufactured in stainless steel AISI304 – EN 1.4301. As an option, in AISI316 – EN 1.4401 
  • Robust structure on four feet, adjustable in height 
  • Fine satin finishing, to avoid sticking of products like gelatin, sugar, etc.   
  • Blades in Stainless steel. Teflon scrapers 
  • Rock wool fiber isolation 
  • No corners or weldings, enabling easy cleaning and avoiding possible bacteria growth  

Electric characteristics 

  • Control box in the column with HMI touchscreen of 7”. Automatic control by PLC with programming  
  • of recipes. Safety in the mixers and in the opening of the covers by inductive detectors. Heating  
  • elements in thermal oil jacket in the electric models. Double jacket for steam in the Steam models 

Working in mode manual: 

  • Control for time, control of the end of cycle, and temperature by probe PT-100.  
  • Beeper at the end of the process 

Working in mode automatic: 

  • Turning time clockwise or counterclockwise, pause time, mixing speed, selector for minimum speed, temperature, working time, beeper when tilting, the position of tilting of the bowl. 
  • IP 55 protection code 

Safety  

  • Cookers and fryers are units that require strict safety measures both in their construction and use  
  • Our fryers are manufactured with the best quality rock wool isolation to offer a better protection to their users and to improve safety in the processes, besides reducing the heat lost, reducing environmental impact, and to increase the sustainability of the cooking process 
  • All the electric, pneumatic, hydraulic, steam, burners, isolations, etc. components that we use for our cookers are manufactured by 1st quality manufacturers and accomplish norms  
  • All our cookers accomplish Norms  and when required, they are verified by the organisms: TÜV NORD Certification, TÜV NORD Cualicontrol, APPLUS Certification Technological Center, and SCI Control & Inspection 
  • They are also in accordance to Norm DIN 18855 for cooking equipment 

Our steam fryers are in accordance with norms  and, particularly and between others, to the electric Safety guidelines 2006/95/CE, Norm EN 60335-1 and EN60335-2-47, Electromagnetic compatibility guidelines 2004/108/CE, Norms EN 61000-6-1 and EN 61000-6-3.  

Hygiene

Energy saving 

  • Our fryers have the best-quality rock wool isolating material to reduce heating loss, the environment impact and to increase the sustainability of the cooking process, besides offering a better personal protection to the user and to improve the process safety 
  • The processor includes a program for automatic start and pause time.   

Quality control 

  • All our cookers are strictly verified and tested by our Quality Control department previous to its departure. They accomplish Norms  and, when required, they are verified by the organisms: TÜV NORD Certification, TÜV NORD Cualicontrol, APPLUS Certification Technological Center and SCI Control & Inspection 

Tilting 

  • Automatic by a hydraulic system (piston) 

Uses of these fryers 

  • For frying/sauting food products, like ground or cut meat, cracklings, vegetables, pasta, etc. 
  • To produce food products such as: 
    • Ready meals and their ingredients: Stews, goulash, chili con carne, meat with sauce, oriental meals with meat, chicken, fish or vegetables,  ratatouille, fillings for meat pies, scramble eggs, choucrout, pasta, rice, couscous, spinach with cream, mashed potatoes, rice pudding, semolina 
    • Sauces: Tomato, mushrooms, cheese, pepper, bolognese with ground meat, bechamel, onions, with other types of vegetables and meat. Dipping sauces, ketchup, barbecue, and even medium thick and/or with small solid ingredients.  
    • Soups and creams: Soups and creams with or without vegetables, meat or fish, cheese, etc. In general all kinds of soups 

Other products: cracklings, baby meals, jams and confitures, compotes, chocolate, fruits for pies or toppings.
