The same knife should always be used with the same plate and never swapped. This is because the knife and plate will wear together ensuring there are no gaps to create 'mushed' products.
In addition food grade lubricant should be used prior to use as before the meat makes contact with the knife a plate a tremendous amount of friction builds up creating intense heat. This damages the knife and plate, dramatically increases the wear and also heats up the meat producing a lesser product.
